At The Angel at Hetton, our culinary philosophy is built on a single, unwavering standard: a shared obsession with quality and detail without the fuss. While we are deeply rooted in our Yorkshire Dales restaurant setting, we believe that the best farm-to-table fine dining is defined by the integrity of the relationship behind the ingredient.

We do not trade on a simple “local only” message. Instead, Michael Wignall and co-owners James and Jo Wellock prioritise the finest produce available, whether it comes from the surrounding moors or from further afield. What connects every element on the plate is a standard of excellence and a partnership with producers who protect that quality as fiercely as we do.

We are proud to share the story of a particularly special, long-term collaboration: our bespoke Devon lamb from Shutelake Farm.

 

A Partnership of Purpose

Nothing at The Angel is simply “ordered”. Every ingredient is chosen, discussed, and crafted to contribute to the whole experience. This is best exemplified by our relationship with Jennifer at Shutelake Farm, a small family-run business nestled on the River Exe in Devon.

This is not a fleeting seasonal arrangement; it is a long-term partnership that has been built over a number of years. Michael has worked closely with Jennifer to refine every aspect of the process until the product met our specific standard. Shutelake Farm shares our ethos of intentionality and respect, focusing entirely on the welfare of their animals—a commitment that aligns with our own responsibility to respect the ingredients we serve.

 

The Exclusive “Petit Lait Lamb”

Through this dedicated collaboration, Michael and Jennifer have produced “Petit Lait Lamb”. Shutelake Farm is currently the only farm in the UK to farm in this specific way, producing their lamb exclusively for The Angel at Hetton.

For a short, highly anticipated season of just six weeks, we take delivery of this milk-fed lamb. The result is a product that is particularly tender and delicate in flavour. This exclusivity is not about theatre or reinvention for its own sake; it is about providing our guests with an ingredient that has earned its place on the plate through years of shared standards and trust.

 

Respect for the Whole Animal

In Michael’s kitchen, there is no room for clutter or filler. His approach is detailed and complex, yet he maintains a renowned instinct for restraint that ensures the ingredient is never overworked.

The delicate nature of the Petit Lait Lamb allows the team to use the whole animal. This “nose-to-tail” approach is a fundamental part of our commitment to reducing waste and showing the utmost respect for the livestock provided by our suppliers. By ensuring nothing goes to waste, we honour the work of the farmer and the life of the animal, creating a dish where every element has a purposeful role.
