Kaye’s spiked punch
100ml of flat bitter lemon
10ml elderflower cordial
25ml gin of choice
5 Spruce tips
Gorse flower to garnish
In a shaker pour the flat, bitter lemon (if it’s not flat, whisk until it stops fizzing), the elderflower cordial and gin.
Using the back of a knife crush your spruce tips, to release the flavour and place in the shaker.
Add a couple of ice cubes and shake but not for too long (we don’t want to water down the gin).
Sieve into your glass of choice and garnish with the gorse flower.
