Trout

Torched trout, ponzu roe, purple radish, yogurt & fennel

Asparagus

French white asparagus, teriyaki wing, hen of the woods, truffle & black garlic

Ox & meadow

Keens cheddar, carrot, charred swede, braised & smoked ox tongue

Beef

Aged fillet of Yorkshire beef, smoked potato, chervil root, teriyaki & watercress

Yeast

Yeast parfait, salted caramel ganache, walnut, horlicks gel & malt styrofoam
